Aloo Chatni

A lovely vegetarian side dish that you can enjoy with rice, dhal, vegetable bhajis (most things basically!)

Ingredients (Serves 3-4)

5 medium sized Maris Piper or King Edward potatoes
– Peeled, washed and diced into medium chunks

2 green chillies (or more if you like you dishes hot!)
– Chopped into small pieces

2 shallots
-thinly sliced

1 handful of coriander leaves
– finely chopped

1 level teaspoon of salt

Oil for frying potatoes

Method

1) Mix the salt into the potato chunks, then fry the potato chunks in oil until they are light golden brown (as if you were making chips)

2) Once cooked, take the potatoes out and place on kitchen paper to remove excess oil. Leave to cool slightly.

3) In a separate bowl, mix the chillies, coriander and shallots together.

4) Add the potato chunks to the bowl and mash together with the chilli/coriander/shallot mix until all ingredients are well combined together.

5) And that’s it. You are ready to serve!
